Hi Eileen!  I just wanted to thank you again for giving us such a great cooking class.  The food is super delicious and very satisfying.  We are all enjoying the luxury of having a refrigerator full of vegan choices.

After we have had a chance to practice the dishes you’ve shared with us, we will definitely want to take more classes to keep expanding our repertoire.

Eileen’s culinary class was the highlight of my birthday celebration!

It fulfilled all of my expectations because she went above and beyond with her hospitality. The meal was accommodated to cater to all of our diets and only the freshest of ingredients were used. Also, Eileen made it a point to get to know each of us personally; for example, she modified her teaching style and discussion based on the expertise (or lack thereof) of all the class’ attendees. (Being a teacher myself, I know how important this quality can be while teaching a new skill to anyone). As a result, all of us felt comfortable, pausing to ask questions when needed, as well as confident enough to participate. I loved all of the resources that Eileen distributed to each of us as a takeaway.

If you are thinking about taking a class with her, go for it! I can guarantee you that it will be worth every second of the time and every penny of the money you spend. For those skeptics out there who feel that vegan cuisine isn’t for them, take a class with Eileen, and your opinions will be forever altered. As a culinary connoisseur, it was my pleasure to have taken this class with such an inspiring chef. I will be sure to remember this experience and to rave about it for many years to come! I purchased a vegan class with Eileen for my boyfriend for Christmas, and I’m so glad I did!  She showed us both how to make so many gourmet, delicious vegan meals with amazing vegan sauces.  I actually made the “Creamy Macaroni and Cashew Cheese” dish for my family for Easter, and it was a BIG hit.

Thanks Eileen…my husband Bill really loved your class and we are going to try ALL of the recipes that you used.  Last night we bought a pizza pan in order to make pizza in the future.  I am not ready to become a Vegan but you have pushed me with your recipes and the food that Bill brought home to become a vegetarian.  The feelings to become a vegetarian were always there and I really did not eat that much meat (never veal, lamb or venison), we just did not know how many recipes are out there that are good and nutritional and not that hard to make.  With Bill’s summer and winter gardens we will be very busy!
